Strawberry Salsa

You need: 

1 cup sliced fresh strawberries 

1/2 medium red onion 

1 jalapeno pepper, minced

1/2 red bell pepper, chopped

1/2 green bell pepper, chopped

1/2 yellow bell pepper, chopped

1/4 cup cilantro, shredded

1/4 cup orange juice

2T fresh lime juice

2T extra virgin olive oil

salt and pepper to taste

Combine all ingredients in a large bowl. Cover and place in refrigerator for 3 hours. Enjoy! 

Herbed Strawberry Wine

You need:

1 bottle rose wine

1/2 lb fresh strawberries

25 lemon balm leaves

2t rosemary leaves

Wash, slice, and hull the strawberries. Finely chop the herbs. Mix all ingredients and seal in a glass container. Shake well. Refrigerate for 2 days, occasionally shaking. Strain through a cheesecloth. Serve chilled. 

Lemon Balm Pesto

You need:

2 cups lemon balm

1/2 cup extra virgin olive oil

4 cloves garlic

Combine all ingredients in a food processor. Mix well maintaining a chunky consistency. Serve over pasta or vegetables. Makes 2 cups. 

Basil Pesto 

You need:

1 1/2 c basil

5 cloves garlic

1/4 c pine nuts

1/4 c grated parmesan cheese

1/8 c lemon juice

1/8 c olive oil

Combine all ingredients in a food processor. Mix well and serve over pasta or vegetables.
